Fluffy Banana Pancakes with Caramelized Toppings
Ingredients
- 1 cup soy milk
- 1 ripe banana
- 1 tsp vanilla
- 1 cup buckwheat flour or plain wholewheat flour
- 2 tsp baking powder
- 1 tbsp coconut sugar
- 1/4 tsp cinnamon
- pinch of salt
- 1 banana for caramelizing
- coconut sugar for caramelizing
Preparation
In a blender, add 1 cup soy milk, 1 ripe banana, and 1 tsp vanilla. Blend.
Add 1 cup buckwheat flour or plain wholewheat flour, 2 tsp baking powder, 1 tbsp coconut sugar, 1/4 tsp cinnamon, and a pinch of salt. Blend on low until just combined.
Cook on a frypan over medium heat for approximately 3 minutes on each side.
For the bananas, slice them lengthwise and pan fry with a sprinkle of coconut sugar until caramelized.
Serve with your favorite toppings and enjoy.
