Fluffy Banana Pancakes with Caramelized Toppings

Ingredients

  • 1 cup soy milk
  • 1 ripe banana
  • 1 tsp vanilla
  • 1 cup buckwheat flour or plain wholewheat flour
  • 2 tsp baking powder
  • 1 tbsp coconut sugar
  • 1/4 tsp cinnamon
  • pinch of salt
  • 1 banana for caramelizing
  • coconut sugar for caramelizing

Preparation

  1. In a blender, add 1 cup soy milk, 1 ripe banana, and 1 tsp vanilla. Blend.

  2. Add 1 cup buckwheat flour or plain wholewheat flour, 2 tsp baking powder, 1 tbsp coconut sugar, 1/4 tsp cinnamon, and a pinch of salt. Blend on low until just combined.

  3. Cook on a frypan over medium heat for approximately 3 minutes on each side.

  4. For the bananas, slice them lengthwise and pan fry with a sprinkle of coconut sugar until caramelized.

  5. Serve with your favorite toppings and enjoy.
