Easy Vegan Matcha Pancakes
Ingredients
- 1 cup whole wheat flour @bobsredmill
- 1 tbsp ground flax
- 1/2 tbsp matcha powder @soarorganics
- 2 tbsp coconut sugar @betterbodyfoods
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup almond milk @malkorganics
- 1 tbsp apple cider vinegar @bragglivefoodproducts
- 1 1/2 tbsp coconut oil @vitacoco
- 1 tsp vanilla
Preparation
Make your flax egg by mixing 1 tablespoon flax with 3 tablespoons water and set aside for about 5 minutes.
Make your buttermilk by combining almond milk and apple cider vinegar and set aside for about 5 minutes.
Mix your dry ingredients in a separate bowl.
Combine them to the flax egg and buttermilk.
Then combine the rest of the ingredients and blend them all with a hand mixer.
Cook your pancakes over medium heat for about 2-3 minutes, then flip to the other side and repeat.
Top with vanilla coconut yogurt, raspberries, chia seeds, and pumpkin seeds.
