Easy Vegan Matcha Pancakes

Ingredients

  • 1 cup whole wheat flour @bobsredmill
  • 1 tbsp ground flax
  • 1/2 tbsp matcha powder @soarorganics
  • 2 tbsp coconut sugar @betterbodyfoods
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup almond milk @malkorganics
  • 1 tbsp apple cider vinegar @bragglivefoodproducts
  • 1 1/2 tbsp coconut oil @vitacoco
  • 1 tsp vanilla

Preparation

  1. Make your flax egg by mixing 1 tablespoon flax with 3 tablespoons water and set aside for about 5 minutes.

  2. Make your buttermilk by combining almond milk and apple cider vinegar and set aside for about 5 minutes.

  3. Mix your dry ingredients in a separate bowl.

  4. Combine them to the flax egg and buttermilk.

  5. Then combine the rest of the ingredients and blend them all with a hand mixer.

  6. Cook your pancakes over medium heat for about 2-3 minutes, then flip to the other side and repeat.

  7. Top with vanilla coconut yogurt, raspberries, chia seeds, and pumpkin seeds.
