Vegan Jalapeno Avocado Pancakes
Ingredients
Batter
- 1 tbsp flax meal
- 2 tbsp water
- 1 banana
- 3/4 c almond milk
- 1/4 c polenta
- 1 tsp salt
- 1/2 c spelt flour
- 2 tsp baking powder
- coconut oil to cover pan
Topping
- 1 jalapeño sliced
- 1/2 avocado
- syrup
Preparation
Mix flax meal and water; let sit for 5 minutes to gel
Mash banana and combine with almond milk
In a separate bowl, mix polenta, salt, spelt flour, and baking powder
Combine wet and dry ingredients to form batter
Heat a pan with coconut oil and cook pancakes until golden on both sides
Top cooked pancakes with sliced jalapeño, avocado, and syrup
