Vegan Jalapeno Avocado Pancakes

Ingredients

Batter

  • 1 tbsp flax meal
  • 2 tbsp water
  • 1 banana
  • 3/4 c almond milk
  • 1/4 c polenta
  • 1 tsp salt
  • 1/2 c spelt flour
  • 2 tsp baking powder
  • coconut oil to cover pan

Topping

  • 1 jalapeño sliced
  • 1/2 avocado
  • syrup

Preparation

  1. Mix flax meal and water; let sit for 5 minutes to gel

  2. Mash banana and combine with almond milk

  3. In a separate bowl, mix polenta, salt, spelt flour, and baking powder

  4. Combine wet and dry ingredients to form batter

  5. Heat a pan with coconut oil and cook pancakes until golden on both sides

  6. Top cooked pancakes with sliced jalapeño, avocado, and syrup
