Vegan Vanilla Chai Pancakes

Ingredients

  • 1 small banana, mashed
  • 1 1/4 cups vanilla soya milk (can use regular soy)
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • generous pinch cardamom

Preparation

  1. Mix all ingredients in a bowl until well blended and heat coconut oil or olive oil in a saucepan over a medium to high heat.

  2. Spoon the mixture into the pan to make 2-3 pancakes at a time.

  3. When they start to form bubbles, flip them to cook the other side and place on a plate.

  4. Continue until you’ve used all the mixture and serve with your favourite toppings! ENJOY!
