Easy Healthy Avocado Pancakes

Ingredients

  • 2 tablespoons flaxseed meal
  • 5 tablespoons water
  • 1 cup unsweetened almond milk
  • 1/3 cup mashed ripe avocado
  • 2 tablespoons coconut sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/3 cups gluten-free all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon coconut oil

Optional

  • 1/4 teaspoon spirulina powder
  • Blueberries

Preparation

  1. In a small bowl, mix 2 tablespoons flaxseed meal with 5 tablespoons water to make a flax egg and let it sit for 5 minutes.

  2. In a blender, combine 1/3 cup mashed ripe avocado, 2 tablespoons coconut sugar, 1/4 teaspoon spirulina powder (if using), 1 teaspoon lemon zest, 1 teaspoon vanilla extract, and 1/4 teaspoon salt, then blend until smooth.

  3. Transfer the blended mixture to a bowl and stir in the flax egg mixture and 1 cup unsweetened almond milk

  4. Add 1 1/3 cups gluten-free all-purpose flour and 1 1/2 teaspoons baking powder to the bowl and stir until just combined.

  5. Heat 1 teaspoon coconut oil in a skillet over medium heat

  6. Pour the batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown

  7. Serve warm, optionally with blueberries
