Easy Vegan Pear and Cinnamon Pancakes

Ingredients

  • 2 mashed ripe pears
  • 1/3 cup applesauce
  • 3 tablespoons cinnamon
  • 2-3 cups almond milk
  • 1/2 cup all-purpose flour
  • 1/2 cup oat flour
  • 1/2 teaspoon baking powder
  • 2-3 tablespoons maple syrup or sugar alternative
  • Vegan butter for greasing

Preparation

  1. Mash up the pears on a separate plate.

  2. In a bowl, add all the dry ingredients: oat flour, all-purpose flour, and cinnamon.

  3. Add the almond milk, applesauce, and pears to the bowl.

  4. Give it a quick whisk.

  5. Add baking powder and whisk until incorporated.

  6. Grease the pan with vegan butter or oil and heat it to medium to low heat.

  7. Add a small bit of pancake batter to the pan.

  8. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula.

  9. Let it cook on the other side until done.

  10. Repeat the process for all the pancakes.

  11. Enjoy them.
