Easy Vegan Pear and Cinnamon Pancakes
Ingredients
- 2 mashed ripe pears
- 1/3 cup applesauce
- 3 tablespoons cinnamon
- 2-3 cups almond milk
- 1/2 cup all-purpose flour
- 1/2 cup oat flour
- 1/2 teaspoon baking powder
- 2-3 tablespoons maple syrup or sugar alternative
- Vegan butter for greasing
Preparation
Mash up the pears on a separate plate.
In a bowl, add all the dry ingredients: oat flour, all-purpose flour, and cinnamon.
Add the almond milk, applesauce, and pears to the bowl.
Give it a quick whisk.
Add baking powder and whisk until incorporated.
Grease the pan with vegan butter or oil and heat it to medium to low heat.
Add a small bit of pancake batter to the pan.
Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula.
Let it cook on the other side until done.
Repeat the process for all the pancakes.
Enjoy them.
