Vegan Breakfast Brookies and Peanut Butter Cookies

Ingredients

  • 1/4 cup oat flour (heaping 1/4 cup oats, blended)
  • 1-2 tbsp coconut flour
  • 1-2 tbsp peanut butter (i used 2 tbsp of powdered pb [measured after mixed with water])
  • 1/2 - 1 tbsp maple syrup
  • 2 tbsp granulated sweetener
  • 1-2 tbsp applesauce
  • 1/2 tsp baking powder
  • dark choc chips, to taste

Preparation

  1. For the brownie layer: 1 flax egg, 1/4 cup oat flour (heaping 1/4 cup oats, blended), 2 heaped tbsp cocoa powder, 1/4 cup granulated sweetener, 1/4 cup applesauce, 1 tbsp maple syrup, 1-2 tbsp peanut butter.

  2. Mix the brownie layer ingredients together

  3. In another bowl, use your hands to mix the cookie ingredients, crumbling it together to form a sticky crumble

  4. Pour the brownie batter into (silicone if possible) cupcake cases {i made 6 small} and then crumble on the cookie dough on top -> if you have extra cookie dough, form mini pb cookies {i made 3}

  5. Sprinkle choc chips on top

  6. Bake 18-20 mins, cool slightly, remove from moulds and serve
