Sazón Grilled Tofu Skewers

Ingredients

  • 2 blocks extra firm tofu (450g each)
  • 1/4 cup tamari
  • Juice of 1 lime
  • 1 tbsp maple syrup or preferred liquid sweetener
  • 1 tbsp neutral oil
  • 1 tbsp sazon
  • 2 garlic cloves
  • 1 medium red onion
  • 2 cups thick asparagus pieces or other vegetable of choice

Preparation

  1. Drain the tofu and press out excess water for at least an hour.

  2. In a bowl or ziplock bag, add tamari, lime juice, maple syrup, neutral oil, sazon, and garlic and mix gently.

  3. Cut the tofu into chunks and place in the marinade; stir or shake and allow to sit for at least 1 hour.

  4. Thread the tofu, onion, and asparagus onto skewers until full and repeat with remaining ingredients.

  5. Place the skewers on a preheated griddle or grill pan and cook for about 4 minutes until grill marks appear.

  6. Flip the skewers and cook for an additional 3-4 minutes.

  7. Repeat with any remaining skewers.
