Mint Chip Ice-Cream Bites

Ingredients

  • 5 graham crackers
  • 1 tbsp. cacao powder
  • 1/4 cup coconut sugar
  • 1/4 cup melted butter
  • mint chip ice-cream
  • coco whip
  • hazelnut chocolate shavings

Preparation

  1. Place the graham crackers, cacao powder, coconut sugar, and melted butter in a blender and blend until everything is combined.

  2. Place mini muffin liners in a mini muffin tin and press 1/2 tbsp. of crust into the bottom of each.

  3. Scoop ice-cream on top and freeze for at least 2 hours.

  4. Top with coconut whipped cream and chocolate shavings and enjoy.

Notes

  1. This recipe makes 16 mini bites.
