Vitamin C Rich Refined Sugar-Free Orange Creamsicle

Ingredients

  • Zest and juice from 4 medium oranges (approximately 1/4 cup zest and 1 cup juice)
  • 14 ounces full fat coconut milk
  • 1 tablespoon vanilla
  • 2 tablespoons pure maple syrup

Preparation

  1. Blend all ingredients together.

  2. Pour the mixture into popsicle molds.

  3. Freeze overnight.

  4. Divide into 12 popsicles for approximately 70 calories each.

  5. Use full fat coconut milk for best texture to avoid a icy consistency.

  6. Optionally, add 1 tablespoon of ginger juice for extra flavor.
