Easy Peanut Butter Noodles

Ingredients

  • 1 lb spaghetti noodles
  • 1/2 cup smooth peanut butter
  • 1 Tbsp grated ginger
  • 14 oz canned coconut milk
  • 4 cloves garlic
  • 2 Tbsp soy sauce or aminos
  • 1 tsp curry powder
  • 1/2 cup pasta water

Preparation

  1. Cook the spaghetti to al dente in salted water and reserve 1/2 cup water before draining.

  2. Whisk together the sauce ingredients in the pot used to cook the pasta.

  3. Toss the noodles into the sauce and add veggies.
