Easy Peanut Butter Noodles
Ingredients
- 1 lb spaghetti noodles
- 1/2 cup smooth peanut butter
- 1 Tbsp grated ginger
- 14 oz canned coconut milk
- 4 cloves garlic
- 2 Tbsp soy sauce or aminos
- 1 tsp curry powder
- 1/2 cup pasta water
Preparation
Cook the spaghetti to al dente in salted water and reserve 1/2 cup water before draining.
Whisk together the sauce ingredients in the pot used to cook the pasta.
Toss the noodles into the sauce and add veggies.
