Plum and Scotch Bonnet Chili Jam

Ingredients

  • 5 ripe plums
  • 1 onion
  • 1 sweet red pepper
  • 2 scotch bonnet chilli peppers de-seeded
  • 5 mild red chillies de seeded, or left in if you like it real hot
  • 3 large cloves garlic
  • 1 thumb piece of ginger
  • Salt and pepper
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 1 tbsp red wine vinegar
  • 1/4 cup water

Preparation

  1. Boil water and add plums for 3 to 4 minutes or until skin starts to peel, then transfer to ice water, peel the skins, and chop finely.

  2. Fry onion in oil with sweet red pepper, scotch bonnet chillies, and mild red chillies until softened and fragrant, about 10 minutes over medium heat, and season with salt and pepper.

  3. Add garlic and ginger and cook for a few more minutes until combined.

  4. Add caster sugar, brown sugar, chopped plums, red wine vinegar, and water, stir, bring to a boil, and boil for 10 minutes, stirring occasionally.

  5. For a jammier texture, add more sugar and continue cooking, or blend for smoothness, then jar and store.
