Spicy Indonesian Blakutak Sauce
Ingredients
- 500g blakutak
- 3 red shallots
- 4 garlic cloves
- 5-6 green chilies
- 6 bird's eye chilies or to taste
- 4 candlenuts
- 1/2 teaspoon palm sugar
- 1 stalk lemongrass, smashed
- 1/2 inch galangal, smashed
- 1/2 inch ginger, smashed
- 2 bay leaves
- 2 cups water
- soy sauce to taste
- salt to taste
- stock powder to taste
Preparation
Grind red shallots, garlic, and candlenuts, then sauté until fragrant.
Add green chilies and sauté until slightly wilted.
Pour in water and add salt, stock powder, palm sugar, and soy sauce, then adjust the taste.
Wait until the water boils, then add blakutak.
Stir and cook until the water reduces, the color darkens, and oil separates.
Turn off the heat and serve with warm white rice.
