Stir-Fried Corn with Anchovies

Ingredients

  • 250 grams corn
  • 3 tablespoons fried anchovies
  • Salt to taste
  • Sugar to taste
  • Stock powder to taste

Sliced aromatics

  • 3 red shallots
  • 1/2 yellow onion
  • 3 cloves garlic
  • 3 red chilies
  • 3 large green chilies
  • 6 red bird's eye chilies

Preparation

  1. Heat a little oil and stir-fry the onions and chilies until fragrant. Add the corn and a little water, then cook until the corn is soft.

  2. Add sugar, salt, stock powder, and anchovies. Adjust the taste, then remove from heat and serve.

Tips

  1. Be careful with adding salt because the anchovies are already salty.
