Spicy Stir-Fried Cassava Leaves with Anchovies

Ingredients

  • 1 bunch cassava leaves, picked
  • Salt or seasoning, to taste
  • 2 tablespoons sweet soy sauce
  • Anchovies, as needed
  • Oil for stir-frying

Ground spices

  • 4 shallots
  • 2 garlic cloves
  • 1/2 or 1 piece shrimp paste
  • 6-8 red chilies
  • 1 peeled tomato

Preparation

  1. Massage the cassava leaves and wash, then drain.

  2. Stir-fry the ground spices until fragrant and oil releases, adding salt or seasoning.

  3. Add anchovies and cassava leaves, stir until wilted.

  4. Add half a glass of water and stir again until water reduces and leaves are tender.

  5. Add sweet soy sauce, stir, taste for seasoning, then turn off heat and serve.
