Spicy Stir-Fried Cassava Leaves with Anchovies
Ingredients
- 1 bunch cassava leaves, picked
- Salt or seasoning, to taste
- 2 tablespoons sweet soy sauce
- Anchovies, as needed
- Oil for stir-frying
Ground spices
- 4 shallots
- 2 garlic cloves
- 1/2 or 1 piece shrimp paste
- 6-8 red chilies
- 1 peeled tomato
Preparation
Massage the cassava leaves and wash, then drain.
Stir-fry the ground spices until fragrant and oil releases, adding salt or seasoning.
Add anchovies and cassava leaves, stir until wilted.
Add half a glass of water and stir again until water reduces and leaves are tender.
Add sweet soy sauce, stir, taste for seasoning, then turn off heat and serve.
