Fried Cabbage with Spicy Sambal

Ingredients

  • A plateful of cabbage, cut into medium pieces
  • 25 red chilies
  • 10 bird's eye chilies
  • 3 shallots
  • 2 garlic cloves
  • 1/3 tomato
  • 1 sachet shrimp paste
  • 1/2 teaspoon salt
  • 1/2 tablespoon sugar or 1 sachet diet sugar
  • Seasoning to taste

Preparation

  1. Fry the cabbage and remove it after it wilts; for a crunchy texture, do not over-wilt.

  2. Boil the red chilies, bird's eye chilies, shallots, garlic, and tomato until slightly wilted, then cool and blend until smooth.

  3. Sauté the blended mixture with shrimp paste, add salt, sugar, and seasoning, then adjust taste after it cooks and changes color.

  4. Add the cabbage to the sambal mixture, stir briefly, and it is ready to serve.

Tips

  1. For a crunchier texture, avoid over-wilting the cabbage during frying.
