Stir-Fried Bitter Melon with Dried Shrimp
Ingredients
- 1 large bitter melon, thinly sliced
- 2 tablespoons dried shrimp
Sliced spices
- 4 cloves garlic
- 8 shallots
- 2 large red chilies
- 10 bird's eye chilies
Other spices
- 2 cm piece of galangal, crushed
- 3 bay leaves
- 1 tablespoon oyster sauce
- Sugar to taste
- Salt to taste
- Pepper to taste
- Stock powder to taste
Preparation
Stir-fry the sliced spices together with galangal and bay leaves until fragrant.
Add the dried shrimp and stir-fry again until somewhat dry.
Add the sliced bitter melon and stir-fry until wilted.
Add a little water, season with oyster sauce, sugar, salt, pepper, and stock powder, then adjust the taste.
Cook briefly to keep the bitter melon crunchy, then remove from heat and serve.
Tips
To reduce bitterness, rub the sliced bitter melon with salt before cooking, if desired.
Use plenty of spices to mask the bitterness of the bitter melon.
