Stir-Fried Beef Skin and Tofu
Ingredients
- 1/2 kg beef skin
- 200g fried tofu
- 4 shallots
- 3 garlic cloves
- 10 curly chilies
- 1 piece galangal
- 1 bay leaf
- 1 tablespoon sweet soy sauce
- 1 teaspoon oyster sauce
- Sugar to taste
- Salt to taste
- Pepper to taste
Preparation
Sauté all spices until fragrant.
Add beef skin and tofu.
Add a little water.
Stir until all ingredients are well mixed.
Adjust seasoning and serve.
Tips
Wash the beef skin clean.
Boil until water boils, then discard the water.
Boil again with galangal, ginger, and salt; optionally add lemongrass and bay leaf depending on availability.
Boil until tender with the mentioned spices.
Discard the water again, wash the beef skin clean, and cut to preference.
