Pumpkin Lasagna with Ground Beef

Ingredients

  • 350 g pumpkin lasagna or 1 pumpkin
  • 1 onion
  • 1 garlic clove
  • 1 tablespoon olive oil
  • 500 g lean ground beef
  • 400 g Italian stir-fry vegetables
  • 400 g canned diced tomatoes
  • 1 tablespoon Italian herbs
  • salt and pepper
  • 1 tablespoon tomato puree
  • 250 g ricotta cheese
  • 50 g Parmesan cheese
  • 100 g grated low-fat cheese

Preparation

  1. Sauté the onion and garlic in a pan with olive oil, then add the ground beef, and finally add the Italian vegetables.

  2. Add the diced tomatoes along with the Italian herbs and tomato puree, and season with salt and pepper.

  3. Mix the ricotta cheese with the Parmesan cheese.

  4. In an oven dish, layer the meat mixture, thinly sliced pumpkin (if using a whole pumpkin), and the ricotta mixture. Repeat the layers until all ingredients are used, and top with the grated low-fat cheese.

  5. Bake for 30 minutes at 180 degrees Celsius or until the pumpkin is tender. Enjoy!
