Baked Rice with Kofta

Ingredients

  • 3 cups short-grain rice
  • 2 cups broth
  • 2 cups milk
  • 500 grams kofta meat
  • 2 tablespoons corn oil
  • 1/4 cup vinegar
  • 1/2 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fine cardamom
  • 1 cup clotted cream or qaymak

Preparation

  1. Wash the rice and soak it in water for 15 minutes. Prepare a suitable baking dish.

  2. Shape the kofta into medium-sized balls.

  3. In a skillet, heat the oil and fry the kofta. Add vinegar, tomato paste, cardamom, salt, and black pepper, then let it boil to create a light sauce.

  4. Drain the rice and place one-third of it in the baking dish.

  5. Add the kofta with its sauce, then cover with the remaining rice.

  6. Pour in the milk and broth.

  7. Spread the clotted cream over the top and do not stir.

  8. Cover the dish and bake in the oven at 180°C for one hour until the rice is cooked. Then uncover and bake for another 10 minutes until golden brown.
