Best Easiest Vegan Sweet Potato Dahl

Ingredients

  • ✨ 1/2 onion, chopped
  • ✨ 1 + 1/2 tsp ground cumin
  • ✨ 1 tsp ground coriander
  • ✨ 1/2 tsp ground ginger
  • ✨ 1 tbsp curry powder
  • ✨ 1/2 tsp turmeric
  • ✨ 1/2 tsp chilli powder
  • ✨ 1/2 cup dry red lentils
  • ✨ 1/2 cup dry yellow split peas
  • ✨ 1 carrot, peeled + chopped
  • ✨ 1 medium sweet potato, chopped
  • ✨ 1 tbsp lemon juice
  • ✨ 1/2 cup frozen peas
  • ✨ salt & pepper
  • ✨ serve with brown rice
  • ✨ steamed cauliflower
  • ✨ iceberg lettuce
  • ✨ spiced carrot hummus
  • ✨ maple syrup (highly recommended, trust me on this)

Preparation

  1. Sauté the onion until soft, add in the spices

  2. Add the carrot, sweet potato, lentils, split peas and 2 cups of water, simmer for 30-40 mins until the lentils are cooked and potatoes are soft

  3. Stir in the lemon juice, frozen peas, salt and pepper
