Best Easiest Vegan Sweet Potato Dahl
Ingredients
- ✨ 1/2 onion, chopped
- ✨ 1 + 1/2 tsp ground cumin
- ✨ 1 tsp ground coriander
- ✨ 1/2 tsp ground ginger
- ✨ 1 tbsp curry powder
- ✨ 1/2 tsp turmeric
- ✨ 1/2 tsp chilli powder
- ✨ 1/2 cup dry red lentils
- ✨ 1/2 cup dry yellow split peas
- ✨ 1 carrot, peeled + chopped
- ✨ 1 medium sweet potato, chopped
- ✨ 1 tbsp lemon juice
- ✨ 1/2 cup frozen peas
- ✨ salt & pepper
- ✨ serve with brown rice
- ✨ steamed cauliflower
- ✨ iceberg lettuce
- ✨ spiced carrot hummus
- ✨ maple syrup (highly recommended, trust me on this)
Preparation
Sauté the onion until soft, add in the spices
Add the carrot, sweet potato, lentils, split peas and 2 cups of water, simmer for 30-40 mins until the lentils are cooked and potatoes are soft
Stir in the lemon juice, frozen peas, salt and pepper
