Vegan Queso Sweet Potato Soup
Ingredients
- 1 medium sweet potato, peeled & chopped
- 1/2 onion, chopped
- 2 garlic cloves, chopped
- 2 ribs celery, chopped
- 1 medium carrot, chopped
- 3/4 cup raw cashews
- 1/4 cup nutritional yeast
- 1 small can green chilis (127ml)
- 4 cups vegetable broth
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- a pinch of salt & pepper
- a dash of your favourite hot sauce
Preparation
In a soup pot, heat oil over medium heat and sauté onion, celery and carrots until soft (about 5 mins)
Add garlic and spices
Cook for an additional minute
Add the rest of the ingredients and bring to a soft boil
Reduce heat to a low and simmer for 15-20 mins (until sweet potato is soft)
Blend soup until smooth using a hand or stand blender
