Black Bean and Sweet Potato Veggie Burger
Ingredients
- 1 medium sweet potato
- 1/4 of a small red onion
- 1/2 of a red bell pepper
- 1-2 cloves garlic
- 1 can black beans, rinsed and drained
- 1/2 cup frozen or fresh corn
- 1 tbsp tamari
- 3/4 tsp salt
- 1/2 tsp cajun
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1/4 tsp black pepper
- 1/2 cup rolled oats
Preparation
Cook the sweet potato until soft and creamy, either by baking or boiling.
Chop the red onion, red bell pepper, and garlic into small pieces.
Rinse and drain the black beans, then mash them in a bowl.
In a large mixing bowl, combine the mashed sweet potato, mashed black beans, chopped vegetables, corn, tamari, salt, cajun seasoning, paprika, chili powder, black pepper, and rolled oats; mix until well incorporated.
Form the mixture into burger patties of desired size.
Cook the patties in a skillet over medium heat or bake in the oven until golden and heated through.
