Creamy Pasta with Cashew Sauce and Vegetables

Ingredients

  • Pasta of choice for 4
  • 1 cup soaked cashew nuts
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1 tbsp dried basil
  • 2 tsp smoked paprika powder
  • 1 tsp sea salt
  • 1 tsp black pepper, ground
  • 2 onions
  • 200-400g cherry tomatoes
  • 2 handfuls fresh spinach

Preparation

  1. Boil the pasta according to package instructions.

  2. Boil cashew nuts for 5 minutes, then mix all ingredients in a high speed blender until smooth and creamy.

  3. Sauté onions and cherry tomatoes on medium heat until onion is soft. Then add the sauce, heat on medium heat, add the pasta and combine.

  4. Serve!
