Creamy Smoked Paprika Pasta

Ingredients

  • Pasta of choice for 4

Sauce

  • 1 cup soaked cashew nuts
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1 tbsp dried basil
  • 2 tsp smoked paprika powder
  • 1 tsp sea salt
  • 1 tsp black pepper, ground

Other

  • 2 onions
  • 200-400g cherry tomatoes
  • 2 handfuls fresh spinach

Preparation

  1. Boil the pasta according to package instructions.

  2. Boil the cashew nuts for 5 minutes, then mix all the sauce ingredients in a high-speed blender until smooth and creamy.

  3. Sauté on medium heat until the onion is soft, then add the sauce, heat on medium heat, add the pasta and combine.

  4. Serve.
