Creamy Vegan Pasta with Cashew Sauce
Ingredients
Pasta
- Pasta of choice for 4
Sauce
- 1 cup soaked cashew nuts
- 1 cup water
- 2 tbsp lemon juice
- 2 tbsp nutritional yeast
- 1 tbsp dried basil
- 2 tsp smoked paprika powder
- 1 tsp sea salt
- 1 tsp black pepper, ground
Vegetables
- 2 onions
- 200-400g cherry tomatoes
- 2 handfuls fresh spinach
Preparation
Boil the pasta according to package instructions.
Boil the cashew nuts for 5 minutes, then blend all sauce ingredients in a high-speed blender until smooth and creamy.
Sauté the onions, cherry tomatoes, and spinach on medium heat until the onion is soft, then add the sauce, heat through, add the pasta, and combine.
Serve the dish.
