Creamy Smoked Paprika Pasta
Ingredients
- - Pasta of choice for 4 (around 400grams)
- 1. Boil according to package
- Sauce
- - 1 cup cashew nuts (boil for 5 mins then drain)
- - 1 cup water
- - 2 tbsp lemon juice
- - 2 tbsp nutritional yeast
- - 1 tbsp dried basil
- - 2 tsp smoked paprika powder
- - 1 tsp sea salt
- - 1 tsp black pepper, ground
- - 2 onions
- - 200-400g cherry tomatoes
- - 2 handfulls fresh spinach
Preparation
Boil cashew nuts for 5 minutes, then mix all ingredients in a high speed blender until smooth and creamy
Sauté on medium heat until onion is soft. Then add the sauce, heat on medium heat, add the pasta and combine
Serve
