Creamy Smoked Paprika Pasta

Ingredients

  • - Pasta of choice for 4 (around 400grams)
  • 1. Boil according to package
  • Sauce
  • - 1 cup cashew nuts (boil for 5 mins then drain)
  • - 1 cup water
  • - 2 tbsp lemon juice
  • - 2 tbsp nutritional yeast
  • - 1 tbsp dried basil
  • - 2 tsp smoked paprika powder
  • - 1 tsp sea salt
  • - 1 tsp black pepper, ground
  • - 2 onions
  • - 200-400g cherry tomatoes
  • - 2 handfulls fresh spinach

Preparation

  1. Boil cashew nuts for 5 minutes, then mix all ingredients in a high speed blender until smooth and creamy

  2. Sauté on medium heat until onion is soft. Then add the sauce, heat on medium heat, add the pasta and combine

  3. Serve
