Easy Beef Teriyaki Meatballs

Ingredients

  • 16 oz ground beef 80/20
  • 1 cup panko crumbs
  • 1/4 cup green onion, finely chopped
  • 1 large egg
  • 1 tsp freshly grated ginger or 1/4 tsp ground ginger
  • 1 garlic clove, minced
  • 1 tsp sesame oil
  • 1/4 cup milk
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1 1/2 tsp kosher salt

Teriyaki sauce

  • 1/4 cup mirin
  • 1/2 tsp garlic powder
  • 1/2 cup light brown sugar, packed
  • 1/3 cup soy sauce
  • 1 Tbsp sesame oil
  • 1 1/2 tbsp cornstarch
  • 1 medium garlic clove, minced
  • 1/2 tsp fresh ginger or 1/8 tsp ground ginger

Preparation

  1. Mix all the meatball ingredients together and form into meatballs.

  2. Place the meatballs in a baking dish and bake for 18-23 minutes until they reach an internal temperature of 160ºF and are golden brown. Remove from oven.

  3. Prepare the teriyaki sauce by adding all of the sauce ingredients to a medium-sized pot and placing it over medium-low heat.

  4. Cook the sauce for 8-10 minutes until it thickens.

  5. Add the cooked meatballs to the sauce.

  1. Pairs well with cooked rice and broccoli. Enjoy!
