Everything Bagel Harissa Tofu Rice Bowl
Ingredients
Everything bagel seasoning
- 2 tbsp poppy seeds
- 1.5 tbsp dried minced garlic
- 1.5 tbsp dried minced onion
- 1 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- 0.5 tbsp red pepper flakes (optional)
- 2 tsp coarse sea salt
Tofu
- 1 block extra firm tofu
- 0.5 cup corn starch
- 0.33 cup plant milk
- 2 tbsp everything bagel seasoning
- 1 tbsp harissa powder (optional)
- 1 tsp sea salt
- 0.25 cup neutral oil

- Jade pearl rice
- Chipotle sea salt
- Baby greens
- Strawberries
- Avocado
- Baby cucumbers
- Beets
- Orange baby tomatoes
- Basil
- Chives
- Everything bagel seasoning
Preparation
Combine all everything bagel seasoning ingredients in a bowl and stir until well incorporated.
Place the plant milk in a bowl.
In a separate bowl, whisk together the corn starch, everything bagel seasoning, harissa powder, and salt.
Dip the tofu cubes first in the plant milk, then roll in the corn starch mixture to coat all sides.
Heat the oil in a skillet over medium heat and once hot, add the tofu and cook until golden on all sides, about 1-2 minutes per side.
Sauté mushrooms and brussels sprouts in a skillet with chipotle sea salt until slightly softened.
Cook the jade pearl rice according to package instructions.
Steam the beets until tender.
In a bowl, start with a base of chopped baby greens.
Add cooked rice, sautéed vegetables, and prepared tofu.
Top with strawberries, avocado, baby cucumbers, steamed beets, orange baby tomatoes, basil, chives, and a sprinkle of everything bagel seasoning.
