Fisherman's Stew for Tonight's Dinne

Ingredients

  • 200g mussel meat
  • 200g cooked prawns
  • 150g scallops
  • tin of tomatoes
  • diced onion
  • diced carrot
  • 1 tsp oregano
  • 2 garlic cloves
  • 1 tsp paprika
  • 1/4 tsp chilli flakes
  • 2 tbsp tomato puree
  • 2 tsp olive oil
  • 2 bags frozen cauli rice
  • add the frozen cauli rice and simmer until heated through.

Preparation

  1. Fry the onion, carrot and garlic in the oil until soft, add the tomato puree, oregano, paprika and chilli flakes and cook for a couple of minutes

  2. Tip in the tin of tomatoes plus 200ml water

  3. Bring to the boil and simmer to reduce by 1/3

  4. Add the mussel meat and prawns, cook for 5 minutes to heat through then add the Scallops and cook for a further 2-3 minutes

  5. Add the frozen Cauli rice and simmer until heated through
