Gaziantep Dried Vegetable Dolma
Ingredients
Filling
- 3 cups rice
- 2 tablespoons pepper paste
- 2 onions
- 3 cloves garlic
- salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 1 tablespoon isot pepper
- juice of 1 lemon
- 2 tablespoons pomegranate molasses
- 1.5 cups olive oil
- half cup water
Dried vegetables
- 20 dried eggplants
- 15 dried peppers
- 5 dried zucchinis
- 8 dried acur
- grape leaves
Preparation
Mix all the filling ingredients together.
Cook the dried vegetables in hot water until slightly softened.
Fill the softened vegetables with the prepared filling mixture.
Place a heavy plate on top and add hot water up to the plate level.
Add a bit of salt and start heating.
When it begins to boil, simmer on low heat for 55 minutes until done.
