Assorted Turkish Stuffed Vegetables
Ingredients
- 3 cups rice
- 1 cup olive oil
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste
- 3 onions
- 3 tomatoes
- 4-5 cloves garlic
- half bunch parsley
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried mint
- lemon salt or pomegranate molasses, to taste
Preparation
Wash the rice thoroughly.
Finely chop the onions, garlic, parsley, and tomatoes, or process in a food processor.
Add all the ingredients and mix well.
Adjust the acidity to your taste.
Add the spices and mix.
Stuff the mixture into desired vegetables.
Cook the stuffed vegetables until done.
