Traditional Turkish Spinach Börek
Ingredients
- 3 cups all-purpose flour
- 2 cups whole wheat flour
- Approximately 1.5 cups water
- 1 teaspoon salt
Filling
- 500 grams spinach
- 3 onions
- Half bunch parsley
- 1 teaspoon pepper paste or red pepper flakes
- Half teaspoon black pepper
- Olive oil
Preparation
Dough
Put flour and salt in a bowl and add water little by little to knead a dough with the softness of an earlobe
Filling
Wash and chop the spinach, massage with salt and squeeze out the water
Chop the onions finely and sauté lightly, add paste and cook a bit more, then cool slightly and mix with spinach
Add chopped parsley and black pepper and mix to make the filling ready
Assembly and baking
Divide the dough into 9 mandarin-sized pieces
Let rest for 15 minutes, grease the tray well, place the opened phyllo sheet and brush with olive oil
Put filling on the second layer and add filling every two layers, use less filling on first and third layers and normal in the middle
When phyllo sheets are done, slice, drizzle with plenty of olive oil, brush, and bake at 180 degrees until golden
