Homemade Vegan Laksa Soup
Ingredients
- 1 onion
- 4 chilies
- 4-6 garlic cloves
- 50g ginger
- 1 nori sheet
- 1 tablespoon cumin and paprika
- 1 teaspoon turmeric
- 5 cups vegetable stock
- 2 sticks lemongrass
- 1 can coconut milk
- 1 lime
- olive oil
- 1 block tofu
- 1 packet rice noodles
- 2-3 cups mixed vegetables
- handful bean sprouts
Preparation
Blend onion, chili, garlic, ginger, nori, and a splash of olive oil to create a paste.
Add the paste to a hot soup pot and fry lightly until fragrant.
Remove the pan from heat and add dried spices, stirring thoroughly until fragrant.
Place the pan back on medium heat and add vegetable stock, lemongrass, salt, lime, and coconut milk.
Bring the mixture to a boil, add cubed tofu, lower the heat, and simmer for 20-30 minutes.
Meanwhile, prepare rice noodles and place them into soup bowls.
Chop vegetables and add portions to the soup bowls.
After simmering, ladle the hot broth over the noodles and vegetables in the bowls.
Top with fresh lime juice, bean sprouts, and extra hot sauce if desired.
