Indonesian Chopped Beef Curry
Ingredients
- 500 g beef shank, diced
- 500 g beef brisket, diced
- 200 ml instant coconut milk
- As needed, boiled water
- Oil for sautéing
Spice blend 1
- 5 cm galangal, smashed
- 3 stalks lemongrass, smashed
- 3 turmeric leaves, tied in a knot
- 5 cardamom pods
- 6 kaffir lime leaves
- 3 star anise
- 5 cm cinnamon stick
- 3 goroka
Spice paste 2
- 25 shallots
- 10 cloves garlic
- 5 candlenuts
- 3 tbsp coriander
- 1 thumb-sized turmeric root
- 1 thumb-sized ginger
- 2 nutmegs
- 25 red curly chilies
Seasonings
- Salt as needed
- Sugar as needed
- Flavor enhancer as needed
Preparation
Heat oil in a pan, add all spices and sauté until fragrant.
Add the meat and stir-fry until the color changes, then add enough water to cover the meat.
Add salt, sugar, and seasoning, cook until the meat is half tender.
Once the meat is half tender, add coconut milk, stir occasionally to prevent it from splitting, cook until the sauce thickens, taste and adjust seasoning, then remove from heat and serve.
