Spiced Baked Grouper with Shrimp and Potatoes
Ingredients
- 1/4 teaspoon whole mustard
- 1/2 teaspoon whole coriander
- 1/2 teaspoon whole cumin
- 1/2 teaspoon whole black pepper
- 1/2 teaspoon crushed chili
- 1 teaspoon salt
- 4 pieces grouper fillets
- 2-4 tablespoons olive oil
- 2 cloves crushed garlic
- 1 stick green onion chopped with leaves
- 1 teaspoon ginger
- 2 teaspoons lemon juice
- 2 tablespoons vinegar
- 12 jumbo shrimp
- 2 medium boiled potatoes
For serving
- fine parmesan cheese
Preparation
Set the wire rack in the middle of the oven and preheat the oven to 180°C.
Prepare individual oven dishes or a medium-sized oven dish suitable for serving.
In a mortar, place mustard, coriander, cumin, pepper, and chili, then use the pestle to crush the spices coarsely.
Sprinkle a quarter of the spice mixture on the grouper pieces and add a little salt.
In a wide skillet, place olive oil and heat on medium heat until the oil is hot, then add grouper pieces, cook until the bottom is golden, flip with a wide metal spoon, and cook the other side until golden, then transfer to the dishes.
In the same skillet, add garlic, green onion, and ginger, stir with a wooden spoon until the garlic aroma rises, add shrimp, stir until shrimp turn golden, add lemon juice and vinegar, then transfer shrimp to a side plate.
To the same skillet, add the remaining spice mixture and potatoes, then use a potato masher to mash the potatoes and mix with the contents in the skillet.
Using a wide plastic spoon, spread the potato mixture over the grouper, arrange shrimp on top of the potatoes, and sprinkle a little cheese over the grouper.
Place in the oven for 25 to 30 minutes until grouper and shrimp are cooked.
Serve the grouper with shrimp immediately.
