Spicy Fried Liver and Gizzard

Ingredients

  • 10 pairs chicken liver and gizzard
  • 7 small potatoes
  • 1/2 packet fried chicken seasoning mix
  • Bay leaves
  • Lime leaves
  • Salt
  • Sugar
  • Stock powder
  • Oil for frying and sautéing

Blended spices

  • 4 cloves garlic
  • 10 shallots
  • 12-15 curly red chilies
  • 1 tomato

Preparation

  1. Peel the potatoes, wash them, cut into cubes, and fry until cooked, then set aside.

  2. Wash the liver and gizzard, parboil with 1/2 packet fried chicken seasoning mix, sufficient water, 2 bay leaves, and 3 lime leaves until cooked. Cool, cut into pieces, fry briefly, and set aside.

  3. Heat the remaining oil from frying the liver and gizzard, then sauté the blended spices along with 2 bay leaves and 3 lime leaves until cooked and fragrant.

  4. Add salt, sugar, and stock powder. Add the potatoes and liver and gizzard, stir until even. Taste and adjust seasoning. Remove from heat and serve.
