Spicy Pulled Jackfruit Pork
Ingredients
- 1 yellow onion, diced
- 2 large cloves garlic, minced
- 1/8 teaspoon cloves
- 1/8 teaspoon cinnamon
- 1/2 teaspoon chili flakes
- 1/4 teaspoon cayenne
- 1 teaspoon smoked paprika
- 1/2 tablespoon cumin
- 1 teaspoon chili powder
- 1/4 cup tamari
- 3 tablespoons maple syrup
- 1/4 cup tomato paste
- 1 cup vegetable stock
- 1 teaspoon liquid smoke
- Cracked black pepper, to taste
- 1 teaspoon sea salt
- Jackfruit (canned, drained and rinsed)
Preparation
Drain and rinse the jackfruit.
Remove the hard core and pull the jackfruit apart with your hands.
Sauté the onion and garlic.
In a small bowl, combine all dry spices and add them to the onion and garlic mixture.
Add the jackfruit and toss to combine.
In another small bowl, combine tomato paste, tamari, liquid smoke, and maple syrup; whisk to combine and add to the pan.
Stir everything together.
Add vegetable stock, salt, and pepper; mix thoroughly.
Cover the pan and reduce heat to medium-low; cook for approximately 30 to 40 minutes.
Taste and adjust seasoning as needed.
Serving suggestions
Add the ragu to pasta, tacos, or other dishes as desired.
