Taco Pulled Chicken for Everyday Meals

Ingredients

  • 2 chicken breasts
  • taco seasoning (homemade is best)
  • 1 cup salsa
  • splash of broth
  • squeeze of lime
  • 1/3 cup chopped onion (for pineapple salsa)
  • red pepper (for pineapple salsa)
  • pineapple (for pineapple salsa)
  • cilantro (for pineapple salsa)
  • lime juice (for pineapple salsa)
  • salt (for pineapple salsa)
  • avocado
  • hot sauce

Preparation

  1. Cook the chicken breasts with taco seasoning, salsa, broth, and lime in an Instant Pot for 13 minutes or in a slow cooker on high for 3 hours.

  2. Shred the chicken and return it to the pot, mixing with the juices.

  3. Serve with fresh pineapple salsa, avocado, and hot sauce.

  4. For a gluten-free option, swap wraps for lettuce.
