Taco Pulled Chicken for Everyday Meals
Ingredients
- 2 chicken breasts
- taco seasoning (homemade is best)
- 1 cup salsa
- splash of broth
- squeeze of lime
- 1/3 cup chopped onion (for pineapple salsa)
- red pepper (for pineapple salsa)
- pineapple (for pineapple salsa)
- cilantro (for pineapple salsa)
- lime juice (for pineapple salsa)
- salt (for pineapple salsa)
- avocado
- hot sauce
Preparation
Cook the chicken breasts with taco seasoning, salsa, broth, and lime in an Instant Pot for 13 minutes or in a slow cooker on high for 3 hours.
Shred the chicken and return it to the pot, mixing with the juices.
Serve with fresh pineapple salsa, avocado, and hot sauce.
