Leftover Taco Breakfast Bowls
Ingredients
- leftover taco meat
- splash of broth
- few handfuls of chopped kale
- 4 beaten eggs
- optional bit of shredded cheddar
- diced tomato
- avocado
- cilantro
- Frank's RedHot
- salt and pepper
Preparation
Reheat leftover taco meat by adding a splash of broth to the pan instead of oil.
Add a few handfuls of chopped kale and cook for a couple of minutes.
Remove the mixture from the pan, then add 4 beaten eggs and soft scramble for 1-2 minutes, with the option to add a bit of shredded cheddar.
Assemble the bowls with the taco meat, diced tomato, avocado, and cilantro.
Drizzle with Frank's RedHot and season with salt and pepper.
