Leftover Taco Breakfast Bowls

Ingredients

  • leftover taco meat
  • splash of broth
  • few handfuls of chopped kale
  • 4 beaten eggs
  • optional bit of shredded cheddar
  • diced tomato
  • avocado
  • cilantro
  • Frank's RedHot
  • salt and pepper

Preparation

  1. Reheat leftover taco meat by adding a splash of broth to the pan instead of oil.

  2. Add a few handfuls of chopped kale and cook for a couple of minutes.

  3. Remove the mixture from the pan, then add 4 beaten eggs and soft scramble for 1-2 minutes, with the option to add a bit of shredded cheddar.

  4. Assemble the bowls with the taco meat, diced tomato, avocado, and cilantro.

  5. Drizzle with Frank's RedHot and season with salt and pepper.
