Vegan Walnut Meat with Spices and Vegetables
Ingredients
- 3 cups walnuts
- 3 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1.5 tablespoons nutritional yeast
- 1 large onion, finely chopped
- Vegetable broth, as needed
- 1.25 cups green peas
- 1.25 cups corn
- Juice of 1 small lime
- 2 tablespoons gluten-free tamari
- Salt to taste
Preparation
Pulse the walnut mixture in a food processor until it has a texture similar to ground meat with some larger pieces remaining.
Cook the chopped onion in a saucepan with a little vegetable broth until translucent, adding more broth as needed to prevent sticking.
Mix in the prepared walnut mixture.
Cook on medium-low heat for 5-7 minutes while stirring, adding vegetable broth as needed if it becomes dry.
Add green peas, corn, lime juice, and gluten-free tamari, then heat until warmed through.
Season with salt to taste.

This walnut meat pairs well with rice, pasta, tacos, or as a filling in baked potatoes.
