Vegan Walnut Meat with Vegetables and Spices
Ingredients
- 3 cups walnuts
- 3 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1.5 tablespoons nutritional yeast
- 1 large onion, finely chopped
- Vegetable broth or olive oil
- 1.25 cups green peas
- 1.25 cups corn, thawed
- Juice of 1 small lime
- 2 tablespoons gluten-free tamari or soy sauce
- Salt to taste
Preparation
In a food processor, pulse 3 cups walnuts, 3 teaspoons chili powder, 2 teaspoons cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, and 1.5 tablespoons nutritional yeast until the texture is similar to ground meat, with some larger pieces remaining.
In a saucepan, cook 1 finely chopped large onion in a little vegetable broth or olive oil until translucent, adding more broth as needed.
Mix in the walnut mixture and cook on medium-low for about 5-7 minutes while stirring, adding vegetable broth as needed if it gets dry.
Mix in 1.25 cups green peas and 1.25 cups corn (thawed), juice of 1 small lime, and 2 tablespoons gluten-free tamari or soy sauce.
Heat until warmed through before serving and season with salt to taste.
