Wild Rice Potato Soup
Ingredients
- 4 cups of water
- 1 onion diced
- 2 garlic cloves, minced
- 1 cup of wild rice
- 6 baby dutch yellow potatoes
- 3 cups of veggie broth
- 1/2 cup of peas
- 1/2 cup of corn
- 1/2 tsp of cumin
- 1/2 tsp of cayenne
- 1 tsp of turmeric
- 3. remove potatoes, and lightly mash them
Preparation
In a pot on medium heat, sautee onion and garlic for 5 mins.
Add potatoes, rice and water, cook for 20 mins until potatoes are soft
Remove potatoes, and lightly mash them
Put the potatoes back in the pot, add 3 cups of veggie broth and add spices. Cook for 5 minutes.
Add peas and corn, let it cook for about 10 minutes on med-high
