Healthy Orange Muffins with Clementines and Banana
Ingredients
- 1.5 cups oat flour
- 1/2 cup oats
- 2 tablespoons chia seeds
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- dash of salt
- 4 clementines (about 2 cups chopped)
- 1/3 cup clementine zest
- 1/2 cup water
- 1/2 cup mashed ripe banana (about 1 medium)
- 1/4 cup maple syrup
- 1 teaspoon vanilla
Preparation
Preheat oven to 350ºF.
Mix all dry ingredients together in a medium mixing bowl.
Blend the 4 clementines in a blender until smooth but pulpy.
Pour the blended clementines into a separate bowl and mix in the remaining wet ingredients.
Combine the dry and wet mixtures until well incorporated.
Bake in the oven for 22-26 minutes.
Allow muffins to cool before removing from the pan and enjoy.
You can also make a glaze or frosting for this, but they are tasty on their own.
