Healthy Orange Muffins with Clementines and Banana

Ingredients

  • 1.5 cups oat flour
  • 1/2 cup oats
  • 2 tablespoons chia seeds
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • dash of salt
  • 4 clementines (about 2 cups chopped)
  • 1/3 cup clementine zest
  • 1/2 cup water
  • 1/2 cup mashed ripe banana (about 1 medium)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla

Preparation

  1. Preheat oven to 350ºF.

  2. Mix all dry ingredients together in a medium mixing bowl.

  3. Blend the 4 clementines in a blender until smooth but pulpy.

  4. Pour the blended clementines into a separate bowl and mix in the remaining wet ingredients.

  5. Combine the dry and wet mixtures until well incorporated.

  6. Bake in the oven for 22-26 minutes.

  7. Allow muffins to cool before removing from the pan and enjoy.

  8. You can also make a glaze or frosting for this, but they are tasty on their own.
