Apple Baked Oats with Cinnamon and Hazelnuts

Ingredients

  • 4 apples
  • 2 cups oats
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs or flax eggs
  • 2 tsp vanilla
  • 1 3/4 cup oat milk
  • 1/3 cup maple syrup
  • 2 tbsp extra virgin olive oil
  • 1 tsp sugar of your choice (I used light brown)
  • 1/4 cup whole hazelnuts

Preparation

  1. Preheat the oven to 180C

  2. In a large bowl mix the oats, cinnamon, baking powder and salt

  3. In another bowl whisk together the eggs, vanilla, oat milk, maple syrup and olive oil

  4. Pour the liquid mix over the oat mix and stir together

  5. Peel the apples. Cut two of them into small cubes and gently fold into the oat mix. Cut the remaining two apples into sixths

  6. Pour the oat mix into an ovenproof dish. Place the larger apple pieces on top, just resting on top of the mix

  7. If using, sprinkle the hazelnuts on top too

  8. Sprinkle with the sugar

  9. Bake for 40-45 minutes till the top is golden brown

  10. If you want it more caramelised on top you can give it 5 minutes under a hot grill but keep an eye on it because it burns easily

  11. Let it cool a little, serve and enjoy
