Plant-Based Blondies with Chickpeas

Ingredients

  • 400g tin of chickpeas, drained and rinsed
  • 1/2 teaspoon salt
  • 135g tahini
  • 2 teaspoons vanilla
  • 1 chia egg (1 tablespoon chia seeds plus 3 tablespoons water)
  • 2 tablespoons oat milk
  • 1/4 cup maple syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon bicarbonate soda
  • 60g chopped vegan chocolate

Preparation

  1. Preheat oven to 180°C

  2. Line a square baking tin with baking foil or grease with coconut oil.

  3. Prepare chia egg by mixing 1 tablespoon chia seeds with 3 tablespoons water and let sit for 5-10 minutes until gel-like

  4. In a blender, add drained and rinsed chickpeas, 1/2 teaspoon salt, 135g tahini, 2 teaspoons vanilla, the chia egg, 2 tablespoons oat milk, and 1/4 cup maple syrup; blend until smooth.

  5. Add 1/2 teaspoon baking powder and 1/4 teaspoon bicarbonate soda to the blender and blend again.

  6. Stir through 60g chopped vegan chocolate.

  7. Pour the mixture into the prepared baking tin.

  8. Bake for 25 minutes
