Plant-Based Blondies with Chickpeas
Ingredients
- 400g tin of chickpeas, drained and rinsed
- 1/2 teaspoon salt
- 135g tahini
- 2 teaspoons vanilla
- 1 chia egg (1 tablespoon chia seeds plus 3 tablespoons water)
- 2 tablespoons oat milk
- 1/4 cup maple syrup
- 1/2 teaspoon baking powder
- 1/4 teaspoon bicarbonate soda
- 60g chopped vegan chocolate
Preparation
Preheat oven to 180°C
Line a square baking tin with baking foil or grease with coconut oil.
Prepare chia egg by mixing 1 tablespoon chia seeds with 3 tablespoons water and let sit for 5-10 minutes until gel-like
In a blender, add drained and rinsed chickpeas, 1/2 teaspoon salt, 135g tahini, 2 teaspoons vanilla, the chia egg, 2 tablespoons oat milk, and 1/4 cup maple syrup; blend until smooth.
Add 1/2 teaspoon baking powder and 1/4 teaspoon bicarbonate soda to the blender and blend again.
Stir through 60g chopped vegan chocolate.
Pour the mixture into the prepared baking tin.
Bake for 25 minutes
