Vegan Coconut Cranberry Nutty Bliss Balls

Ingredients

  • 1+1/2 cups desiccated coconut
  • 1/2 cup macadamias
  • 2 TBS rice malt syrup
  • 1 TBS peanut butter
  • 1/2 tsp vanilla extract
  • 1/3 cup natural pistachios
  • 1/3 cup dried cranberries

Optional

  • desiccated coconut to roll them in

Preparation

  1. Place coconut, macadamias, rice malt syrup, peanut butter and vanilla into food processor and pulse until mixture is smooth, broken down and sticking together, then add pistachios and cranberries and blend until nuts are roughly chopped and mixture well combined

  2. Use hands to firmly press and shape mixture into balls

  3. Roll balls lightly in coconut and place in fridge to set for a few hours

  4. Eat and enjoy
