Healthy Vanilla Cashew Snack Balls
Ingredients
- 1 cup cashews
- 1/3 cup walnuts
- 1/4 cup desiccated coconut
- 1 tsp vanilla extract
- 1/3 cup ground almonds
- 1/3 cup soy milk
- 80g dark chocolate
- 1 tbsp coconut oil
Preparation
Place the cashews, walnuts, desiccated coconut, vanilla extract, ground almonds, and soy milk in a food processor. Blitz until the ingredients are combined, then use a small spoon to scoop and roll into individual balls.
Place the raw balls on baking paper and chill in the fridge for 20 minutes.
Melt the dark chocolate and mix in the coconut oil. Cover each ball with the chocolate mixture.
Chill in the fridge for at least an hour.

Make a batch and store in the freezer for later use.
