Peanut Butter Chocolate Energy Balls

Ingredients

  • 240g medjool dates, pitted (approx 10-12)
  • 30g puffed rice
  • 30g smooth peanut butter
  • 30g fine dark cocoa powder
  • 5g maca powder
  • 15ml coconut oil, melted
  • 15g chia seeds
  • 15g milled flaxseed
  • 5ml vanilla extract
  • Pinch of sea salt

Toppings

  • Desiccated coconut
  • Dark chocolate for drizzling

Preparation

  1. Soak the pitted dates in hot water for 5-10 minutes while you measure out the other ingredients.

  2. Once the dates are soft and plump, drain them and add them to a food processor with the melted coconut oil and blend until they form a smooth paste. It should only take 30-45 seconds to do this.

  3. Add in the chia seeds, ground flaxseeds, peanut butter, cocoa powder and vanilla extract and blend again. Scrape down the sides to ensure everything is evenly mixed together.

  4. Transfer into a bowl and mix in the puffed rice. Roll into tablespoon-sized balls and place onto greaseproof paper. Then roll each ball in the desiccated coconut and drizzle with melted dark chocolate.
