Vegan Date and Nut Roll

Ingredients

  • 2 cups dates (deseeded)
  • 1 tablespoon margarine
  • 2 tablespoons cashew nuts
  • 2 tablespoons almonds
  • 5 pieces tea biscuits
  • 2 tablespoons pistachios
  • 2 tablespoons desiccated coconut

Preparation

  1. Deseed and chop the dates if not already done.

  2. Mix the chopped dates with margarine until well combined.

  3. Add cashew nuts, almonds, and crushed tea biscuits to the date mixture.

  4. Stir in pistachios and form the mixture into rolls.

  5. Roll the date rolls in desiccated coconut to coat.

  6. Chill in the refrigerator for at least 30 minutes before serving.
